Lessons learned from a unique London bakery
The Dusty Knuckle, an emerging star with 118 employees across three locations, supplies bread to Ottolenghi eateries and Michelin-starred restaurants while attracting hipsters for its £4.50 sausage rolls.
Giving back to society, the bakery aids youth offenders in turning their lives around. Over 70% of trainees secure paid work or further education, prompting the establishment of a Community Interest Company last year to connect more potential employers with these individuals.
